How thin should ravioli dough be when using a kitchenAid mixer?
I am making homemade ravioli and im using my pasta roller set with my kitchenAid standing mixer. How thin should the dough be. Ive never made homemade before so this is my first attempt.
I don’t know anything like which numbers to set your rollers to. We have Kitchen Aid but we don’t use a pasta attachment. It should be roughly the thickness of cereal board cardboard or a paper match, if you have that. 1 millimeter, if you can visualize that. Maybe thicker than a cereal box. My Italian aunts used to make it, and it was so thin you could see through it, but that made it very delicate and tricky to handle. Basically as thin as you can get and still feel comfortable handling it through the process. Remember there are two layers around the outside, so too thick can be bad. Let it sit out for a bit before rolling it and it won’t be so sticky….
