Many cast iron Hibachi grills have a large cooking surface which has been preseasoned against weather and heat or fire damage. It is a good idea to use a non-stick cooking spray on the cast iron Hibachi grill before lighting the charcoals for the fire so that no food sticks to the grill during the intense heat it will receive.
Different models of cast iron Hibachi grills come with a different style surface. There are individual grilling surfaces one could purchase in order to use on top of an open flame such as a fireplace, bonfire or even the gas stove top.
Lodge Logic Pro Gridiron Grill
This is a large, square cast iron grill that could be used on a Hibachi, stove top or open flame such as a bonfire or fireplace. The size is a generous 20″ x 10 ½” with a cooking space of 19 ¼” by 8 ½” with a slight slope that drains grease into a large ‘grease gutter’ type ridge along one end. There are two sides to this, one with ridges for searing meats and vegetables while the other side is flat and smooth for grilling cheese sandwiches, pancakes or cooking eggs.

This is a standard model with a dual acting grilling surface for optimal grilling perfection. One side could be lower to the flame and heat with the other side is higher up so food does not cook as fast. Cast iron grill heats up evenly so the entire piece of food is cooked to the right consistency and temperature, not “hot spots” like with other grills. Each cooking grill measures 9″ x 15″ to accommodate several pieces of meat or vegetables.
